vietnamese iced-coffee cake

No summer is complete without a tall glass of Vietnamese iced coffee. Strong, dark coffee and tooth-achingly sweet condensed milk is a heavenly flavour pairing, so it was only a matter of time before someone applied the combo to baking. Michelle from the food blog Hummingbird High is one such person – she’s come up with a tried-and-tested recipe for Vietnamese iced-coffee cake, and hoo boy, does it look delish.

Just like a good cuppa, Michelle’s cake begins with a very strong brew. When cooled, the glorious stuff is baked into a layer cake, then coated in condensed milk frosting, along with not-so traditional (but very welcome) swirls of chocolate fudge. Yummo!
