This wobbly dessert has the power to win the hearts of many.

Mum always told us not to play with our food, but picture this: you’ve been patiently waiting for your homemade panna cotta to set in the fridge. Finally, after many painstaking hours, you remove the chilled gelatinous dessert and carefully pry it from its mould. Success! The panna cotta gently plops onto the plate. This eye-pleasing treat is ready to serve, but wait! Before you tuck in, you decide to celebrate your culinary achievement by slowly raising the plate into the air and, when the moment feels right, you start jiggling. With each satisfying wobble of the silky dome, the hunger in your stomach grows stronger, while the hunger in your soul diminishes. You set the plate down and eat.

Anyways, if you feel like whipping up a jiggly dessert that's fun to play with and even more fun to eat, we highly recommend this recipe by Newcastle foodie Salma Sabdia (aka The Polka Dotter). It's a tantalising twist on the traditional panna cotta, and combines the delicate flavours of rose, cardamom and fig. Delish.
