Who wouldn’t want to eat a raspberry-flavoured cloud?

If we asked you to name your top three desserts, there’s a good chance that mousse wouldn’t make an appearance. Heck – it probably wouldn’t even crack your top 10. The aerated dessert is, unfortunately, often consumed in rather unpleasant places, like hospitals and cramped aeroplanes. So, despite having a melt-in-your-mouth texture and being absolutely delicious, mousse is regularly overlooked.

Super-talented baker Emma Duckworth is here to revive mousse’s reputation, with her delectable chocolate-raspberry mousse cake. The cake’s base is chocolate sponge, and is topped with a thick layer of raspberry mousse, which Emma describes as a “raspberry-filled cloud”. That alone has convinced us to give the recipe a crack.
