There’s nothing we enjoy more than sipping on matcha and nibbling on tasty morsels of mochi. The traditional Japanese treat, made from sweet glutinous rice flour, is super-soft and wonderfully chewy.

If you’ve been hesitant to try the dessert, allow us to recommend easing yourself in with this mochi-inspired browned butter cake by In the Midnight Kitchen. Its texture isn’t quite as chewy as real mochi, and it has a flaky top rather than an ultra-smooth exterior.
