browned butter mochi cake

By Shannon Jenkins

Inspired by the Japanese dessert, this cake is as light and fluffy as a cloud.

There’s nothing we enjoy more than sipping on matcha and nibbling on tasty morsels of mochi. The traditional Japanese treat, made from sweet glutinous rice flour, is super-soft and wonderfully chewy.

If you’ve been hesitant to try the dessert, allow us to recommend easing yourself in with this mochi-inspired browned butter cake by In the Midnight Kitchen. Its texture isn’t quite as chewy as real mochi, and it has a flaky top rather than an ultra-smooth exterior.

Need more convincing? Browned butter is the bee’s knees. Head this-a-way if you’d like to give it a whirl.

To accompany you while you embark on your next culinary quest, we’ve cooked up some lovely kitchen merch, including three colourful tea towels and a flower-power apron. Find the lot over at the frankie shop.
