If you'll be dishing up afternoon tea for Mum or Nan, we have it on good authority that a rustic lemon-ricotta cake – like this one by Heinstirred – is a guaranteed crowd-pleaser. Hein’s version is slathered with cream-cheese icing and topped with pistachios for some extra crunch.
