swedish cheesecake with apples and caramel
Light, fluffy and easy to make, you’ll want to scarf this one down straight out of the oven.
Calling all lazy bakers! If you’re the type who loathes shuffling about in the kitchen and agonising over the perfect buttercream frosting, this Swedish cheesecake is here for you. According to the recipe from Half Baked Harvest, it’s much like making a giant mug cake: you grab your ingredients, chuck ‘em in a blender and bake. That's it! The result is a light and fluffy cheesecake – one that’s much less rich than the American version, and heaps less fussy to make, too. Woohoo! Now, depending on how you’re feeling after that first step, you can also get an apple and caramel sauce on the go. But, as recipe maker Tieghan Gerard says, this cake is just as good directly out of the oven.
