summery antipasto salad

summery antipasto salad

If you had the pleasure of hosting or attending a few barbecues, summer soirées or pool parties over the holidays, then your fridge might be littered with a selection of half-filled jars of olives, sundried tomatoes and other platter-y bits and pieces.

To keep those summery vibes coming while clearing out the depths of your fridge, we suggest whipping up this antipasto salad by Sylvia Fountaine from Feasting at Home. It makes use of leftover platter ingredients by combining them with fresh veggies and herbs, and dousing them in a tasty Italian dressing. Delish!

Since scoffing down mini mozzarella balls and marinated olives from a salad bowl seems a little more realistic than setting up a charcuterie board in the office, we’re digging Sylvia’s idea. You too can take inspiration from her recipe by heading this-a-way.

To accompany you while you embark on your next culinary quest, we’ve cooked up some lovely kitchen merch, including three colourful tea towels and a flower-power apron. Find the lot over at the frankie shop.
