Combining fresh soba and carrot noodles with watermelon radish, edamame beans and a few other tasty treats, what we love most about this snazzy-looking recipe is how simple it is to throw together on a sticky summer's night.
It's the brainchild of Sarah from A House in the Hills, and has us pondering how many more colours we can add to the edible rainbow. We've got a couple more in mind, but in the meantime this vibrant yumminess will do just fine.
