The official name for this pretty dessert is ‘vacherin’, but if we’re being honest, we’ve never uttered the word. In essence, a vacherin is a meringue cake much like a pavlova – except, rather than spooning fresh fruit and cream onto your baked egg whites, a vacherin calls for careful stacking of meringue discs. In between each layer is melted white chocolate, raspberries, rosewater cream and a smattering of rose petals (if you’re feeling extra fancy). Très simple, really. Get the recipe here.
