Here comes the sun! (In the form of this lemon sunshine cake from The Simple Sweet Life, anyway.) Made from three layers of poppy seed yumminess and a trio of icing colours, there’s a little bit of fiddling to get the sun-kissed, dip-dyed look, but it’ll be worth it to scoff down those sugary rays. Did we mention there’s lemon curd buried deep inside? Yummo. Even if the sun is fading away outside, at least you know you can still have it sitting on your kitchen bench.
