With spring finally on the go, it’s time to whip up some fancy tea cakes fit for a posh garden party. Pop on your tweed blazer, gather your corgi pups and munch on these lavender, lemon and earl grey treats by Portland baker Michelle from Hummingbird High. If you’ve ever had lavender-flavoured food and thought “yuck! this tastes like soap!”, Michelle says the key is to use it in very small doses for a super-subtle, floral finish. Her recipe will turn out three double-layered mini-cakes and 12 petit fours. Top with lemon and white chocolate ganache, as well as some dried lavender, and you’ve got yourself a delicious spring dessert. Pop those pinkies and enjoy.
