Whoever discovered the ground-breaking process of caramelisation deserves some kind of medal. We’d argue that any recipe could be improved by the addition of some kind of sticky, sugary fruit or vegetable. That’s why, when we saw Niki from Rebel Recipes’ take on rice pudding, we were forced to drop everything (literally – there were coffee cups, laptops and small children flying through the air) and make it immediately. Inspired by a delectable Thai sticky coconut rice pudding, Niki whipped up this gingery, roast pear-topped version. If you too would like to experience this drool-inducing treat, head right this way.
