blueberry and lemon icebox cake

Any time with cake is a good time (as the old saying goes), but it’s worth noting that good becomes great when layers are involved. Enter: the blueberry and lemon icebox cake from Sally’s Baking Addiction. Much like a chocolate ripple cake, this one involves no actual baking (you just assemble your ingredients and freeze overnight), but golly does it look fabulous once it’s ready. A note for Australian cooks: try using digestives in place of Graham crackers.
