Pizzas are one of our favourite I-don't-really-feel-like-cooking-tonight meals, because you can throw almost anything on top and it will taste (and look) like you've got it going on in the kitchen. This particular recipe, though, is less about what's up top and more about what lies beneath: namely one dazzling pink beetroot base.
