watermelon sponge cake

Sandwich watermelon-y goodness between layers of cake, dab on a little cream, and you've got yourself an edible sponge and a juice-free chin.

Watermelon, you wonderful fruit! Not only do you look as pretty as a picture, with your vivid pink flesh and sweet stripy rind, we imagine that if summer had a flavour it would be you – all sunny and delicious and positively lolly-like.

We do have one bone to pick with you though. What's with all the gosh-darn juice? It's impossible to enjoy a slice of your syrupy goodness without winding up with what's essentially a sticky beard, and we need a solution, stat.

Or then again, maybe the clever clogs over at Adventures in Cooking have already come up with one. Sandwich watermelon-y goodness between layers of cake, dab on a little cream, and you've got yourself an edible sponge and a juice-free chin. Yep, we reckon they're onto something.
