seven ways to fancy up your toast

Let’s hear it for fancy toast – a tasty, time-saving dish we’d argue counts as dinner (and breakfast and lunch). The next time your brain’s too fried to cook, trundle over to Vegetarian ’Ventures’ list of cottage cheese toast ideas. As it turns out, you can do a lot with sliced bread and creamy curds – two ingredients that make an excellent base for whatever you’ve got leftover in the fridge. For the main course, you could try classics like tomato and fried egg (our mates at Bulla reckon avocado and dukkah's a winner, too.) And for dessert, Shelly from Vegetarian ’Ventures suggests fresh peach slices or a smattering of strawberries and honey on top. Mmm! Cottage cheese, zesty avocado & dukkah rye toast
Preparation time: 10 minutes
Serves: 2

Ingredients
4 thick cut slices of dark rye sourdough, toasted
200g Bulla Cottage Cheese Onion & Chives
1 avocado, cut into slices
1 lemon, zest and juice
2 Tbsp dukkah
salt and pepper to season

Method

1. Squeeze lemon juice over the avocado slices.

2. Divide cheese evenly over the four slices of toast.

3. Layer the avocado slices on top of the cottage cheese.

4. Sprinkle with dukkah and lemon zest.

5. Season to taste.

Note: Also delicious topped with a slice of prosciutto.
