When we stumbled across this plum cheesecake by Raquel Ramos of Cau de Sucre, we immediately felt the urge to put our hand through the laptop screen, grasp a slice with our bare fingers and stuff it in our gob. But alas, that would cause great damage to said hand and screen, so it might be best to just whip up the cheesecake from scratch ourselves.
Raquel’s recipe is actually easier than it looks, consisting of a simple base, cream-cheese filling, plums and streusel (aka crumble). Give it a crack by heading here.
