It's not the first time that Mr. P's weirdo lamingtons have featured on the frankie blog, but when we stumbled across this lamingtini, we had no choice but to revive his coconut-coated crusade.

It's not the first time that Mr. P's weirdo lamingtons have featured on the frankie blog, but when we stumbled back across this luscious-looking lamingtini, we basically had no choice but to revive his coconut-coated crusade.

Being the lammo fans we are, we've often pondered over the most efficient way to transport the Aussie icon direct to our bellies; as it turns out there's a more palatable tactic than popping them in the blender (and it's  less likely to leave you with dried coconut and crumbs all over your kitchen).

Though this concoction is a wee bit boozy, we imagine it would work just as well using coconut milk as a substitute for rum. Have a peek at the recipe – along with the rest of his lamington reinventions – here.
