full recipe – no-blender sweets with dates, cranberries and rolled oats
Foodie Ashleigh Butler (aka @vanlifediaries) shares a simple, scrummy recipe from her new book, The Small Kitchen Cook.
These sweet, nutritious treats can be made with any dried fruits, nuts, nut butter and seeds that you have floating about in your cupboard. The combinations are endless. For example, you can swap pistachios for almonds or cranberries for apricots. Just stick to the ratios and make sure you use the dates or prunes, maple syrup and nut butter as they bind the mixture together.
PREP TIME
30 minutes
INGREDIENTS
Makes 15
10 fresh dates or 12 prunes, finely chopped
1/2 a cup of cranberries, finely chopped
1/2 a cup of rolled oats
1/2 a cup of hemp seeds, plus 3 tablespoons for garnish
1/2 a cup of sunflower seeds
1/2 a cup of pistachios, finely chopped
4 tablespoons of maple syrup
4 tablespoons of nut butter (I use almond)
Rose petals for garnish (optional)
METHOD
1. Combine all the ingredients in a bowl and mix well using your hands to break up any big pieces. Roll the mixture into even-sized balls.
2. Garnish with hemp seeds or rose petals. Store in the fridge or freezer for up to seven days.
