Celebrate this year's Fairy Bread Day with this decadent ice-cream sandwich.
Maybe it's a shot in the dark, but we have a sneaking suspicion that you lovely folk love to nosh down on some good old fairy bread. If you're a fan of the treat (like us), then we have some pretty amazing news to spill: there's a national holiday dedicated to the party staple – hoorah!
Every November 24th since 2014, patrons have slapped some 100s and 1000s onto their favourite slice of bread and butter and celebrated this iconic dish, all in the name of a good cause. This year, the team behind Fairy Bread Day have teamed up with The Pyjama Foundation, an organisation dedicated to supporting young people and children living in foster care, with Dollar Sweets pledging to donate 10c from every pack of 100s and 1000s sold.
To help celebrate this momentous occasion, the ripper people behind Fairy Bread Day have cooked up this neato recipe to try out ourselves. Enjoy!
INGREDIENTS (serves 8)
16 cookies (if not making by hand)
1 litre vanilla ice-cream
Dollar Sweets 100s and 1000s
If making homemade cookies:
1 1⁄3 cup all-purpose flour
2 tbsp cornstarch
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup unsalted butter, cold and cut into cubes
1 cup brown sugar
1 cup granulated sugar
3 tsp vanilla extract
2 large eggs
1 1⁄3 cups baking white chocolate
METHOD
1. With the mixer on low speed, slowly pour the dry ingredients into the butter mixture until integrated.
2. Pour in the white chocolate chunks and stir to distribute evenly throughout the dough.
3. Scoop 16 dough balls of equal size and line them on the cookie sheets, keeping them 8 centimetres apart.
4. Place one baking sheet into the oven for 12-15 minutes or until the cookies look golden brown. Repeat this step with the following baking sheets.
5. Cool the cookies fully. If you’re impatient (like us), pop them into the fridge until cool.

6. To assemble the sandwiches, place a scoop of ice-cream in the middle of the cookie. Leave enough space from the edge of the cookie to avoid a mess.
7. Pour the 100s and 1000s into a bowl, and gently roll the sandwich sideways to cover the ice-cream.
8. Tightly wrap each cookie sandwich in plastic wrap and place in the freezer until cool.
9. Enjoy!
